After La Bastide de Moustiers, Alain Ducasse and his friend Bruno Clément have breathed new life into a hotel in Provence, in surroundings steeped in history, on the site of a royal Abbey in the very heart of the Coteaux Varois vineyards.
This 18th century building has ten bedrooms each named after one of the species growing in the garden, or a famous personality who stayed here in bygone days : Eucalyptus, Blackberry Bush, Chestnut Tree, General de Gaulle, Wisteria, Rolle, Rose Garden…
On the initiative of the Var regional council, the building’s restoration was carried out by Arc’h—a firm of architects situated in Brignoles—and by the Bâtiments de France guided by Alain Ducasse’s sensitivity. The ambience and decoration have been created using objects and antique furnishings that Alain Ducasse has collected during his travels all over France.

A charming country inn


People chosen and trained by Alain Ducasse over a period of several years run the establishment.
The kitchen brigade is made up entirely of his former students. Each and every day they prepare four menus offering simple cooking based on meals served in the hotel in many moons ago.
The chefs use fresh produce from the hotel’s own kitchen garden as well as fare purchased in the local markets. The guests can also savour truffles prepared "Bruno-in-the-Hills" style…
This charming country inn, a member of the Châteaux & Hôtels de France chain is next to a 12th century royal Benedictine abbey — a place of peace and serenity in the heart of a jealously guarded wine-producing village.
Nestling at the foot of the Loube hills, it is thanks to the Var Regional Council and its president—Monsieur Hubert Falco—that Alain Ducasse and Bruno Clément have been able to give a second life to this country inn which, in bygone days, welcomed guests from all over Europe who were seeking a little corner of paradise.

Authentic and traditional cooking

At l'Hostellerie de l'Abbaye de La Celle, Alain Ducasse and Bruno have opted for authentic cooking that reflects the region's flavours, offering simple yet perfectly presented dishes… true tasty cooking.
The kitchen team is lead by Benoît Witz, a long-time disciple of Alain Ducasse and heir to his philosophy. Each day, he proposes two menus as well as à la carte dining, blending tradition and imagination.

Surroundings steeped in history

The restaurant at l'Hostellerie de l'Abbaye de la Celle has two dining rooms; one located in the main house and the other in the Cistercian chapter house in the royal abbey. They can seat between eighty and one hundred guests.
It is in these surroundings - steeped in history - that you will discover an atmosphere of just the right amount of simplicity and comfort. A great place so full of life, yet silence is everywhere.
